Adobong Pusit Recipe

One of my favorite recipe, squid stewed in vinegar and some other common ingredients in a Filipino kitchen. 


Ingredients:
1 lb squid, cleaned and drained well
1/2 cup vinegar
2 tablespoon soy sauce
5-6 cloves of garlic, minced
1 small onion, sliced thin
1/2 teaspoon whole peppercorn
2-3 pieces bay leaf
salt, sugar and ground black pepper to taste
2 tablespoon olive oil


Cooking Direction:
Using a deep pan saute garlic and onion till caramelized in olive oil.
Add the squid and whole peppercorn and stir.
Add bay leaves, soy sauce and vinegar. Simmer in medium high heat for few minutes.
Season with salt, black pepper and sugar (optional).
Simmer in high heat for few more minutes. Remove from heat and serve.
*Remember not to overcook cook or else the squid will be chewy.*


Paksiw na Galunggong Recipe

Fish cooked in vinegar and spices


Ingredients:
1 lb galunggong fish, cleaned
1 cup datu puti vinegar
5-6 cloves of garlic, minced
1 thumb size ginger, sliced thin
1 medium size onion, sliced thin
salt and ground black pepper to taste
2 tablespoon cooking oil


Cooking Direction:
Using a wok, arrange slices of ginger then top with the fish. 
Top the fish with minced garlic and slices of onion. 
Season with salt, ground black pepper and vinegar. 
Bring to a boil for few minutes in medium high heat. 
Add the cooking oil. 
Simmer in medium low heat for few more minutes or till fish is fully cooked. 
Remove from heat and serve hot. 

Pork Liver Afritada Recipe

A very popular dish in the Philippines specially on special occasions. It is a tomato-based stew usually cooked with pork meat or chicken but this time I made it with pork liver. Much easier and less time to cook.



 Ingredients:
1 1/2 lb pork liver, cut into bite size
1 large potato, cut into bite size
1 large carrot, cut into bite size
1 small red bell pepper, julienne
5 cloves of garlic, minced
1 medium size onion, sliced thin
1 cup tomato sauce
1 cup water
2 tablespoon soy sauce
3 tablespoon olive oil or any cooking oil
salt and black ground pepper to taste



Cooking Direction:
Using a wok, saute garlic and onion till caramelized in olive oil in medium high heat. 
Add the slices of carrots first, potatoes and the bell pepper till half way cooked.
Add the slices of pork liver and stir for few minutes till liver is half way cooked. 
Season with soy sauce and ground black pepper. 
Pour in the tomato sauce and the water. Cover and simmer for 5 minutes. 
Season with salt if needed. 
Check if the liver is fully cooked then remove the wok from the heat. 
Serve hot and enjoy!

Halabos na Hipon Recipe

Try this simple yet very tasty  shrimp recipe 


Ingredients:
2 lbs medium size shrimp
1 cup 7 up
5-6 garlic cloves, minced
salt to taste
2 tablespoon olive oil
green onion for garnishing


Cooking Direction:
Using a wok, saute garlic in olive oil till golden brown. Add shrimp and toss for few minutes.
Add the 7 up and salt to taste. Turn heat to high.
Allow to boil till sauce thickens and shrimp is fully cooked.
Remove shrimp from heat. Arrange in a platter and garnish with chopped green onions and serve.

Chicken Sotanghon Recipe

A simple no fuss and healthy Chicken Sotanghon recipe.


Ingredients:1 - 400 grams sotanghon
1 lb chicken, boneless and sliced thin
4 pcs garlic cloves, crushed
1 small onion, sliced thin
1 medium carrot, julienne
3 celery stick, julienne
1/2 small cabbage, cubed
2 pieces chicken knorr cubes
1 tablespoon soy sauce
salt and ground black pepper to taste
2 tablespoon cooking oil
3-4 cups of water

Cooking Direction:
Soak sotanghon in a deep basin using warm water for few minutes. Cut sotanghon into desired lengths using a scissor. Drain sotanghon and set aside.

Saute garlic and onion in cooking oil. Add slices of chicken. Saute till chicken is fully cooked. 
Add the carrots, celery and cabbage. Stir well for few minutes and remove the mixture from the wok and set aside.
Using the same wok bring 3-4 cups of water to boil in medium high heat. 
Add Knorr chicken cubes and soy sauce to the boiling water. Season with salt and pepper to taste. 
Once the broth starts boiling reduce heat to low and add the sotanghon. Simmer for 5-10 minutes.
Check every few minutes if the sotanghon is fully cooked. If you think the sotanghon is not fully cooked and need more water you can always add more but make sure to use hot water. 
Lastly add the sauteed chicken and veggies.
Mix well and simmer for few more minutes and serve hot. 

Serve 4-5

Cooking Corned Beef

One of my favorite simple quick meal. Good anytime of the day.


Ingredients:
2 -15 oz canned corned beef
6 garlic cloves, minced
1 large onion, sliced thin
2 tablespoon cooking oil


Cooking Direction: 
Using a deep pan saute garlic and onion in cooking oil till caramelized.
Add the corned beef and mix well. Cook in medium heat for 5-10 minute and serve.


Crispy Sisig Recipe

Try this simple Crispy Sisig recipe made from Lechon Kawali. 


Ingredients:
1 lb lechon kawali, chopped into bite size
1 thumb size ginger, minced fine
3 garlic cloves, minced
1 small onion, chopped fine
1 small jalapeno, chopped fine
1 small red bell pepper, dice small
1/2 cup vinegar
salt and ground black pepper to taste
1 stem green onion, sliced thin

Cooking Direction:
Mix all above ingredients in a deep bowl. (not including the meat) 
Mix well to get the right taste. 
Add the chopped lechon kawali and stir well. 
Allow to sit for few minutes before serving.

Puto Lanson Recipe

Puto Lanson also known as Aripahol is a Cassava Rice Cake that is so good and a very popular afternoon treat in my hometown, Iloilo City. 


Ingredients:
6 cups grated cassava
3/4 cup brown sugar
1 cup grated young coconut
Tin Molds (I used small empty tuna cans with holes at the bottom)
1/2 cup star margarine or butter


Cooking Direction:
Peel cassava and wash. (I used frozen grated cassava available at your local Filipino or Asian market found at the frozen isle)
Grate the cassava. Using a cheese cloth squeeze out the juice and set aside.
Using a deep bowl mix the grated cassava, brown sugar, grated young coconut and mix well. 
Fill the tin molds and steam for about 20-30 minutes or till fully cooked.
Once it is fully cooked spread some star margarine or butter and serve hot. 
If you want it sweeter sprinkle more brown or white sugar before serving. 

Kalderetang Baka Recipe

Beef Caldereta or Kalderetang Baka is a popular dish in the Philippines specially during birthdays, fiesta or any special occasion. 
Try this creamy recipe that is tasty and so satisfying. Make sure to have a lot of extra rice. Happy Cooking! 


Ingredients:
2 lb beef brisket, cut into cubes
1 large potato, cut into 8 pieces
1 large carrot, cut into bite size
1 small bell pepper, julienne
1 stem green onion, for garnishing (optional)
5-6 garlic cloves, minced
1 medium size onion, sliced thin
2 cups tomato sauce
1 cup pineapple juice
1/2 cup nestle cream
2 cups water
2 tablespoon soy sauce
salt and ground black pepper to taste
sugar to taste (optional)
3 tablespoon cooking oil


Cooking Direction:
Using a pressure cooker heat cooking oil in medium high heat.
Saute garlic and onions till caramelized.
Add the meat and saute till golden brown.
Season with ground pepper and soy sauce.
Add the water and boil till beef is fully done.
Add the tomato sauce and pineapple juice.
Simmer for few more minutes.
Add the nestle cream and stir very well.
Season with sugar and more salt if needed.
Start adding the vegetables starting with carrots, potato and bell peppers.
Simmer for few more minutes or till the vegetables are fully cooked.
Remove from the heat, transfer to a serving dish and garnish with some green onions.
Serve with lots of white rice and enjoy!

Stir Fry Veggies and Shrimp

Try this simple yet so good and healthy shrimp recipe. You can also add other veggies and seafood your tummy desires. 


Ingredients:
1 lb shrimp, peeled
1 lb snow peas, remove both end
1/2 lb button mushroom
1 small bell pepper, julienne cut
1 can baby corn, drained
4-5 garlic cloves, minced
1 small onion, sliced thin
1 thumb size ginger, sliced thin
2 tablespoon olive oil
1/2 teaspoon sesame oil
salt and ground black pepper to taste
1 tablespoon corn starch, diluted in 2 tablespoon water
2 cups water


Cooking Direction:
Heat big wok or deep pan and add olive oil. Saute ginger, garlic and onion till caramelized. Add shrimp, baby corn, bell pepper and mushroom. Stir fry for few minutes in high heat. Add the snow peas then drizzle the sesame oil over the veggies. Add water, a dash of ground black pepper and salt to taste and bring to a boil. Once it starts boiling add the corn starch diluted in water. Bring to a quick boil then remove the pan from the heat to avoid the snow peas from over cooking. Transfer in a serving dish, serve with steam rive and enjoy!

Serve 4-5

Lechon Kawali Recipe

Here is the step by step on how to make Lechon Kawali 
(Fried Pork Belly)


Ingredients:
3-4 lbs pork belly
5 garlic cloves, crushed
1 thumb size ginger
3 laurel leaves
1 teaspoon whole pepper corn
1 stem lemon grass, cut into 4
salt to taste
water  for boiling
oil for deep frying


Cooking Direction:
Combine pork with the garlic, ginger, laurel leaves, pepper corn, salt and enough water in a pan.
Bring to a boil for an hour or till skin is tender.
Remove meat from the water, drain and refrigerate over night.

Slice the meat into 4 pieces. Deep fry until golden brown and the skin is crispy.
Drain excess oil and cut into serving size.
Serve with your favorite dipping sauce. Mine is Mang Tomas lechon sauce and/or spicy vinegar.

Mango Smoothie Recipe

Try this simple and easy Mango Smoothie Recipe. A rich, creamy, delicious and very refreshing dessert.


Ingredients:
3 large mango, peeled and diced
1 1/2 cup fresh milk
1/3 cup condensed milk
2 cups ice cubes


Direction:
Place the mango, fresh milk, condensed milk and ice cubes into a blender. Save few tablespoon of diced mango for topping. Cover and puree until smooth.
Pour into glasses to serve.

Good for 3 serving

Fish Fillet Tausi Recipe

 Fish fillet fried and cooked in salted black beans.


Fish Ingredients:
1 lb Tilapia fillet
2 egg, beaten
2 tablespoon flour
ground black pepper to taste
cooking oil

Sauce Ingredients:
3-4 garlic cloves, minced
1 small onion, sliced thin
1 thumb size ginger, sliced thin
salted black beans, 180 grams drained
sugar to taste (optional)
water
cooking oil


Direction for the Fish:
Mix egg, flour and ground pepper in a bowl. Dip the fish to the batter. Fry the fish one by one. Drain excess cooking, arrange fish in a serving dish and set aside. (Make sure the cooking oil is really hot before frying to avoid the fish from sticking to the pan)

Direction for the Sauce:
Saute ginger, garlic and onions in cooking oil till caramelized. Add the drained salted black beans. Saute for few minutes. Add enough water and simmer in medium low heat till beans turns soft and fully cooked. Add sugar to lesser the salt from the beans.

Pour the black beans sauce over the fish and serve. Enjoy!

Alogbati at Karne Recipe

One of my favorite dish growing up in the Philippines. 


Ingredients:
1 lb ground beef
5 cloves of garlic, minced
1 medium onion, sliced thin
1 piece eggplant, cut into bite size
1 lb squash, cut into bite size
4 cups alugbati, rinsed
salt and pepper to taste
2 tablespoon cooking oil
3 cups water


Cooking Direction:
Saute garlic in cooking oil then the onion till caramelized. Add ground beef and saute till it turns golden brown. Add the squash and saute for few minutes. Now add the water and allow to boil in medium low heat. Season with salt and pepper to taste. Add eggplant then the alugbati leaves. Simmer for few minutes or till all the vegetables are fully cooked. Remove from heat and serve.
