Bangus Bistek Recipe

Fish version of Beef Bistek aka Karne Prita


Ingredients:
2-3 lb Bangus, butterflied
1/3 cup soy sauce
1/3 cup vinegar or calamansi or lemon juice
6 garlic cloves, minced
1 medium size onion
2 tablespoon white sugar
ground black pepper to taste
1/2 cup cooking oil


Cooking Direction:
Heat frying pan and place cooking oil. Once cooking oil is fully hot reduce the heat to medium and start frying the fish till golden brown Set fish aside.

Mix soy sauce, vinegar, sugar and ground pepper. Taste test for desired salty sour sweetness and set aside.

Using a clean frying pan add 2 tablespoon of cooking oil. Quickly fry the onions and set aside. Now brown the garlic then add the soy sauce vinegar mixture. Simmer sauce in medium low heat for few minutes, Place the fried fish in the sauce. Simmer for few more minutes,

Arrange the fish then the sauce in a serving dish. Top with slices of onion and serve hot.

Sinigang na Baka Recipe

A simple beef and vegetables sour soup recipe for everyone to enjoy


Ingredients:
3 lbs beef bones 
1 stem lemon grass, cut into 3
1 bunch petchay, remove ends
1 lb green langka, cut into cubes
1 large onion, cut into 4
1 pack tamarind sinigang mix
salt and ground pepper to taste


Cooking Direction:
Boil enough water in a big pot. Once water starts boiling place the beef bones. Bring to boil for few minutes, remove meat and discard water.

Rinse pot and boil enough water again. Once water starts boiling add the beef, lemon grass stem and onion. Keep boiling till beef is fully soft. (faster if you use pressure cooker)
Once beef is fully cooked add langka and ground pepper. Boil till langka is fully cooked. Season the broth with the tamarind mix and salt to taste. Simmer for few more minutes then add the petchay. Bring to a boil for few minutes, remove pot from the heat to avoid the vegetables from over cooking. Serve hot,

Pan Seared Teriyaki Salmon Recipe

 A Healthy and Tasty Dish for everyone to enjoy


Ingredients:
2-3 lbs Pink Salmon Fillet
garlic salt to taste
2 tablespoon olive oil

Teriyaki Sauce Ingredients:
1/4 cup soy sauce
1/4 cup water
1/2 cup mirin sauce
2 tablespoon cooking wine
2 tablespoon brown sugar
3 garlic cloves, minced
1 thumb size ginger, minced
dash of black pepper
1 teaspoon cornstarch (optional/diluted in 2 tablespoon water)


Cooking the Salmon:
Season Salmon with some garlic salt. Using a thick pan heat olive oil in medium low heat. Adjust heat to low. Fry salmon at least 5-10 minutes in each side. Cover the pan to steam/cook the fish evenly.

Preparing the Teriyaki Sauce:
Using a sauce pan mix all the teriyaki sauce ingredients (not including the cornstarch) and simmer in low heat till thickens. Taste test the sauce for desired sweet salty taste. Remember, you can always add or reduce sugar for desired taste. Once the sauce thicken or reduced to 1 cup add the cornstarch. Stir quick and remove from heat. Strain sauce to discard garlic and ginger pieces and set aside.

Arrange salmon in a serving platter. Pour teriyaki sauce on the fish. Garnish with slices of lemon and greens. Serve hot and enjoy!

Beef Tapa Recipe

You like beef tapa? Then try this simple recipe and enjoy! 


Ingredients:
2 lbs beef round tip roast, thinly sliced
1/4 cup soy sauce
3 tablespoon vinegar
5-6 garlic cloves, minced
2 tablespoon brown sugar
1/2 cup cooking oil


Cooking Direction:
Using a deep bowl mix soy sauce, vinegar, garlic and brown sugar and stir well. Add the meat in the marinade. Cover the bowl and refrigerate for at least 12 hours.

Heat cooking oil in medium heat. Fry till meat turn brown. Serve hot over garlic rice and sunny side up egg.  

Steamed Tilapia

A simple healthy dish 


Ingredients:
2-3 lbs tilapia, cleaned
1 lemon
2 pieces garlic cloves, minced
1 inch ginger, minced
1/3 cup soy sauce
ground black pepper
1 tablespoon sesame oil
1 tomato for garnish


Cooking Direction:
Fill steamer with enough water and bring to a boil. 

Mix soy sauce, garlic, ginger and ground pepper in a bowl. Arrange fish in a pan. Pour the soy sauce mixture over the fish. Top the fish with slices of tomato and steam in medium high heat for maybe 40 minutes to an hour or till fish is fully cooked. 

Season the fish with sesame oil and serve.

Garlic Shrimp Recipe

Simple tasty recipe


Ingredients:
2 lbs medium size shrimp
1 small lemon
4-5 pieces garlic cloves, minced
salt and ground pepper to taste
2 tablespoon cornstarch
1 cup cooking oil


Cooking Direction:
Peel shrimp and leave the tail on. Squish lemon juice on the shrimp and marinate for few minutes. Discard lemon juice. Season shrimp with minced garlic, salt and ground pepper. Toss seasoned shrimp in cornstarch. Set aside.

Heat small deep pan in medium high heat. Pour in the cooking oil. Once the oil is fully hot heat to medium. Fry shrimp one by one till golden brown.

Remove cooked shrimp, place in a serving dish layered with paper towel to remove excess oil and serve.

Pancit Bihon Guisado

Pancit Bihon is one of the popular noodle dish in the Philippines. Always present in the dining table specially during birthday party for long life or barangay fiesta.


Ingredients:
1 8 oz. Pancit Bihon
1/2 lb chicken breast, sliced into thin strips
4 pieces chorizo bilbao, sliced thin
2 cups sliced into strips cabbage
1 onion, sliced thin
4 cloves garlic, crushed
1 carrot, sliced into strips
2 tablespoons cooking oil
3 celery stick, sliced into strips
1 tablespoon soy sauce
1 teaspoon achuete powder dissolved in 1 tablespoon oil
salt & pepper to taste
1 stem green onion, sliced thin for garnishing
2 pieces lemon or lime, sliced for garnishing


Pancit Bihon Cooking Direction: 
Soak the pancit bihon noodles to soften for maybe 10 minutes and drain.

Saute garlic and onions in cooking oil using a large pan or wok in medium heat.
Add the chorizo bilbao, chicken breast and the vegetables until almost cooked.
Remove sauteed ingredients from the wok and set aside.

Using the same wok place 3 cups of water (or more water if needed). Bring to a boil. Once it start boiling lower the heat to medium low. Add soy sauce, pepper and the noodles.
Simmer in low heat for 5 minutes or until the noodles are half way cooked.

Keep mixing noodles to cook evenly.
*Make sure to lower the heat to avoid the noddles from drying fast*
Add the achuete oil and salt.
Lastly add the sauteed meat and veggies to the noodles.
Continue cooking in low heat for maybe 5 minutes or till the noodles are fully cooked.


Remove from heat and serve.
Garnish with slices of green onions and serve with lemon.

Ginisang Upo at Tauge

Dinner......

Ingredients:
3 lbs upo, peeled and slice bite size
1 lb beansprout
1/2 lb pork butt, sliced into bite size
1/2 lb shrimp, peeled
1 small onion, sliced thin
1 piece tomato, diced
4 cloves garlic, crushed
salt and pepper to taste
1 tablespoon canola oil

Cooking Direction:
Saute garlic, onion and tomato in medium low heat. Add sliced pork and saute until golden brown. Add a cup of water and simmer till pork is fully cooked and soft to bite. Add shrimp and 1 cup water. Simmer for few minutes and season with salt and pepper. Add upo and continue to simmer to 3-4 minutes. Remove from heat. Now add the beansprout and mix. Simmer for few minutes and remove from heat to avoid the beans sprout from over cooking. 

Grilled Pork Chops

A tasty Chops recipe worth a try 


Ingredients:
2 lbs pork chops, thin slices
1/4 cup fish sauce
1/4 cup sugar
1/3 cup chopped lemon grass
ground black pepper to taste
1 tablespoon cooking oil

Cooking Direction:
Using a deep bowl mix fish sauce, sugar, lemon grass, cooking oil and a dash of ground pepper. Taste test for desired salt sweetness taste. (Remember you can always add more fish sauce or sugar) 
Marinate pork chops in a couple of hours and refrigerate. 

Start the grill, Grill the pork chops for few minutes in each side. Remove the chops from the grill. Serve hot over steam rice. 

Ginataang Mais Recipe

Rich and creamy plus the corn....yummy!


Ingredients:
1/2 cup sticky rice
3 cups coconut milk
2 cups water
1 15.25 oz. can whole kernel corn
1/2 cup granulated sugar


Cooking Direction:
Using a deep pot, cook sticky rice in 2 cups of water in medium high heat. Once it starts boiling reduce heat to medium low. Keep stirring to avoid the rice from sticking in the bottom of the pot. Once the rice is fully cooked add the coconut milk and continue boiling in low heat. Add the corn and cook for maybe 5 minutes. Add the sugar and stir. Cook for few more minutes and remove from heat.

Serve hot or cold.

Ginisang Talong

A great side dish or a dish it self


Ingredients:
3 pieces eggplant, grilled, peeled and minced
1 large onion, sliced thin
1 large tomato, diced
4-5 cloves of garlic, minced
salt and ground black pepper to taste
2 tablespoon cooking oil
1/2 tablespoon sesame oil (optional)


Cooking Procedure: 
Heat wok and add oil. Saute garlic, onions and tomatoes till caramelized. Add eggplant and stir in medium low heat. Season with salt, ground pepper and sesame oil. Saute for few more minutes. Remove from heat and serve.
