Tilapia in Coconut Milk and Curry Recipe

Try this Ginataang Tilapia recipe I put together
Ingredients:
2 large whole Tilapia, cleaned and cut in halves
2 can coconut milk
1 cup datu puti vinegar
1 cup water
4 pieces garlic, cut thin
2 thumb size ginger, cut thin
1 medium onion, quartered
1 stem lemon grass, cut in 4
1 tablespoon shrimp paste (bagoong)
1 tablespoon yellow curry powder
1/2 teaspoon ground black pepper
1 teaspoon salt (adjust to taste)

Cooking Direction:
Arrange tilapia fish, ginger, lemon grass, garlic and onion in a wok. Pour in vinegar and water. Bring to boil in medium high heat. Once it starts boiling cover wok and continue boiling for 10 more minutes.

Using a deep bowl mix coconut milk, bagoong and curry powder and set aside.

Once the vinegar water mixture reduced to less than half season with salt and ground pepper then pour in coconut milk, shrimp paste and curry mixture. Reduce heat to medium low and simmer for 5-10 minutes or sauce thickens.
Remove from heat, serve over steam rice and enjoy!

Hi Medifast...
I used the whole tilapia with skin on but scales off.
