A mouth watering Pinakbet Recipe, Ilonggo Style


Ingredients:
1/2 lb. Pork Lechon Kawali, sliced
1/2 lb. Shrimp, peeled whole
1 tblspn. Bagoong (Sauteed Shrimp paste)
1 lb. Longbeans, cut bite size
1 lb. Kalabasa (squash) cut cubes
2 pcs. Ampalaya (bittermelon) sliced bitesize
1/2 lb. Okra, cut halves
1 med. piece Talong (eggplant) cut bitesize
4 pcs. Garlic, crushed
1 med. Onion, sliced thin
Salt & pepper to taste.
2 tablespoon Cooking Oil

Cooking Direction:
Using a wok set heat on medium. Saute garlic, onion in cooking oil till golden brown. Add pork and continue cooking. When it starts to sizzle add the bagoong then the shrimp. Season with enough salt and pepper to taste. Add the vegetables starting from sitaw, ampalaya, kalabasa, okra and talong. Stir fry for few minutes then add a cup add a cup of water and simmer till vegetables are cooked. Serve over steam rice. A lot of rice.

Garlic Shrimp Recipe

A very simple, easy 15 minutes recipe.

Ingredients:
2 lb medium size shrimp, cleaned
10 pieces garlic cloves, sliced thin
3 tablespoon olive oil
a dash of salt and ground pepper to taste
green onion, sliced thin for garnishing

Cooking Direction:
Using a heated wok, saute garlic till golden brown in medium-low heat. Add the shrimp and stir. Keep stirring till all shrimp turns golden brown. Season with salt and ground pepper. Remove from heat and garnish with slices of green onion and serve.

Linguine Spaghetti Recipe

Filipino Flavor

Ingredients:
1 lb Linguine Pasta, boiled al dente, drained and set aside
1/2 lb hot dog, cubed
1/2 lb ground pork
2 tall bottle Jufran Banana Sauce
2 cups tomato ketchup
1 cup evaporated milk
1/4 cup crushed garlic
1/2 cup crushed onion
sugar, salt and ground pepper to taste
1/4 cup olive oil

How to prepare Pinoy Spaghetti sauce:
On a big pot warm cooking oil and brown hot dog, set aside.
Using the same oil saute garlic and onion.
Add ground pork till golden brown and fully cooked.
Season with ground pepper and a dash of salt.
Add the tomato ketchup and banana sauce and simmer for 20 minutes.
Add sugar and evaporated milk.
Stir and simmer for another 20 minutes in low heat.
Add browned hot dog to the sauce and simmer for few more minutes.
Season with salt and more ground pepper if desired.

Mix sauce over the pasta or serve separate.

Pork Sinigang

Everyone's Favorite

Ingredients:
2 lbs pork cuts
4 pieces (gabi) taro, cut into 2 piece
2 pieces large eggplant, julienne
1 large (labanos) radish, julienne
1 lb long beans, cut into 3 inches
1 bunch kangkong leaves
1 large size onion, cut cubes
1 pack knorr sinigang mix
2 tablespoon fish sauce
salt and ground pepper to taste
Cooking Direction:
Boil pork meat in water till half way cooked then add the slices of onion. Once the meat is fully cooked add long beans, taro, radish and eggplant. Season with fish sauce, salt and ground pepper. After 5 minutes add the kangkong leaves. Bring to boil for few minutes. Remove from heat and serve.

I can't believe I almost forgot to post this, my favorite of all Seafood Restaurant in Iloilo City. I visited this restaurant few times but only took few pictures of the food I consumed.

Salmon Belly Recipe

Salmon Belly Stewed in Vinegar
Ingredients:
2 lbs. Salmon Belly, rinsed/drained
6 garlic cloves, minced
3 stem green onion, cut in 3 inches
2 pieces large tomato, cut into cubes
1 cup Datu Puti vinegar
1 cup water
salt and ground pepper to taste
Cooking Direction:
Arrange the salmon belly in a deep pan and cover with water. Bring to a boil. Once it starts boiling top the fish with garlic, ground pepper and salt. Pour the vinegar and bring to a boil. Once it starts boiling reduce heat to medium and continue boiling till the water/vinegar mixture reduce to half. Place the green onions and diced tomatoes and simmer for 10 minutes. Remove from heat and serve.

This dish is super healthy and really tasty.

Orochon Ramen in Los Angeles

Me and my family are addicted watching the food channel specially Men v. Food show. One of the episode was done in Los Angeles, CA so we decided to go to take the challenge too...NOT! Just to see the place and taste the famous ramen Adam Richman chowed down.
The menu is pretty basic and simple BUT you have to know what you want to order or suffer the consequence.

We got to the restaurant 10 minutes before 11 am. Lucky we got seated right away. The line got so long around 11:30 am.

A Wedding Lunch Buffet

While I was still in Iloilo City I was asked to be a godmother in a wedding. I have been a godmother to few but was never present in the actual occasion so I thought of the best gift for the bride and groom, a lunch buffet for the immediate family and friends.

Everyone including me was so busy with all the planning and the preparation so I hired a local cook to do all the work. That was the best idea ever. He did such a great job not only with the food but also with the table set up with an affordable price too. I forgot to mention, the cook used to work for Afrique's Restaurant so do I need to say more.

Seafood Paella was so delicious. Cooked perfectly and so full of flavors.

Fish Fillet, crunchy from the outside and moist from the inside. It was served with 2 kind of sauce, tartar and sweet and sour sauce.

Carbonara, the best. Pasta cooked al dente and the sauce so creamy and tasty.

Bakareta cooked tender and full of flavor.

I also got them a simple wedding cake from Tinapayan that says it all.

Everyone enjoyed and loved the food they all went for the seconds or third.

A lunch experience at Max's Restaurant located on the third floor, SM City, Iloilo City.

Feeding A Dental Mission

During our last visit to Iloilo City, we were honored to sponsor a Dental Mission in my Village. Lots of preparation took place but the most important part is feeding the hungry dentist. It all started in the morning so table was set before they got to my house.


For breakfast we served them coffee, chocolate drink, wafers and assorted bread from JD Bakeshop.

I also made fruit salad for dessert.

Tinolang Manok Recipe

Stewed Chicken Soup in Ginger
Ingredients:
2 lbs chicken wings
1 small onion, cut thin
2 pieces thumb size ginger, cut thin
1 stem lemon grass, cut into 4"
1 small red bell pepper, julienned
1 medium size green papaya, julienned
1 cup malunggay leaves
1 cup pepper leaves
salt and ground pepper to taste
1 tablespoon fish sauce
1 tablespoon cooking oil
Cooking Direction:
Saute slices of ginger and onions in cooking oil using a deep pot. Add slices of chicken and lemon grass. Season with fish sauce, ground pepper and simmer for few minutes. Add 4 to 5 cups of water, cover pot and bring to boil in medium high heat for at least 20 minutes or till the chicken is fully cooked. Add more water if needed. Season with salt if desired.
Now start adding the vegetables starting with green papaya. After few minutes add the bell pepper and malunggay leaves. Simmer for 5 minutes. Once all the vegetables are fully cooked removed from heat and serve.
*Remove the lemon grass before serving*

Tortang Talong Recipe

A Simple yet very tasting and filling dish.

Ingredients:
6 pieces small Japanese Eggplant
2 piece egg
salt and ground pepper to taste
cooking oil for frying
Cooking Direction:
Broil eggplant in the oven or stove top. Allow it cool. Peel the skin and discard. Beat 2 pcs. of egg. Sprinkle a dash of ground pepper and salt. Dip the eggplant. Flatten the eggplant on the egg using a fork.
Fry the eggplant dipped in egg in cooking oil in medium low heat. Remove from heat and serve.

Great when served with banana catsup.
