Ginisang Talong

My old time favorite!
Simple and Heathy Cooking
Ingredients:2 pieces large size eggplant, grilled and peeled
3 garlic cloves, minced
1 small onion, sliced thin
1 tablespoon olive oil
salt and ground pepper to taste
Simple Cooking Direction:Sauté garlic and onion till golden brown in olive oil. Add grilled eggplant and stir. Season with a dash of salt and ground pepper. After few minutes remove from heat and serve.
Best when served as a side dish w/ slices of tomato on the side.
