Visayas Blogging Summit 2010

There will be a Visayas Blogging Summit 2010 this coming November 27-28, 2010 in Iloilo!
The Visayas Blogging Summit 2010 will be organized by the Iloilo bloggers! The Visayas Blogging Summit & Blog Awards will be the very first event of its kind to be hosted in Iloilo. These two events will gather bloggers from all over Visayas, invited guests from Luzon and expert speakers from different fields. The goal of the Visayas Blogging Summit (VBS) is to gather ideas and explore the potential impact of blogging on society, business and politics.
The Visayas Blog Awards, on the other hand, aims to recognize notable Visayan-owned and Visayan-related blogs in their respective niches.
The Visayas Blogging Summit & Blog Awards will be hosted by the Iloilo Bloggers Organization, with the support and endorsement of Philippine Blog Awards Inc.
The Iloilo Bloggers Organization is a diverse group of people who have gathered with the mission to promote blogging in Iloilo, because blogging is becoming more and more a socially relevant phenomenon.

Super Creamy
Made of cream of corn, whole kernel corn, evaporated milk, sugar, crushed ice and top with cherries.

Sago Gulaman

Another refreshing "Summer Treat" that any age of the family will surely enjoy. Store bought Sago in Syrup and instead of making the gulaman (jello) I used Nata de Coco (strawberry flavor). Both product of the Philippines.
How to make a super tasty Sago at Gulaman refreshment:Boil 4 to 5 cups of water in a deep pot in high heat. Once water starts boiling reduce heat to medium and start adding the brown sugar a tablespoon at a time slowly. Keep stirring to dilute the sugar granules. Continue boiling for 10 to 15 minutes while continuously stirring. Add the vanilla and the banana extract. Simmer for 5 more minutes while continuously stirring. Remove from heat. Allow to cool and transfer in a jar or a plastic ware for serving.
How to serve:Using a tall deep glass, pour 2 tablespoon of sugar syrup (really depends on how sweet you want it) followed by the sago, crushed ice, gulaman (nata de coco) and lastly more crushed ice. Serve with a spoon to stir and enjoy!

Beef Kaldereta

Also known as Beef Caldereta or Bakareta.
There are other meats that can also be used such as chicken, pork and goat. Ingredients:
2 lbs beef with tendon or any kind of beef desired, cut into cubed
1 large red bell pepper, cut into cubed
1 large size potato, quartered
1 large size carrots, quartered
1 large size onion, sliced thin
5 garlic cloves, chopped
1/2 cup liver spread
1 cup tomato sauce
5 pieces peppercorns, crushed
2 tablespoon soy sauce
1/4 teaspoon crushed chili pepper
3 pieces bay leaf
1/2 cup green olives
salt and ground pepper to taste
olive oil or canola cooking oil


Cooking Direction:
Heat the cooking oil using a wok or a pan. Fry potatoes and carrots till it turns a little brown. Remove fried carrots and potatoes from the pan and set aside.
Using the same wok/pan, saute the garlic then the onions. Add the beef, crushed peppercorn, bay leaves and the soy sauce. Simmer for 5-10 minutes.
Add 4 cups of water and allow the beef to boil for about 2 hours or till the beef is tender enough while continuously adding water if needed.
If you have a pressure cooker that will lessen your boiling time to only 30 to 40 minutes.
Once the beef is fully cooked add the tomato sauce and liver spread. Simmer for 10-15 minutes or until the sauce thickens. Add the green olives, bell pepper and fried carrots and potatoes. Simmer for 5 to 10 minutes. Season with salt and ground pepper to taste and serve.

You need:1 can condensed milk, 1 can evaporated milk, 12 egg yolks, 2 tablespoon vanilla extract, 2 tablespoon white sugar, 9' round baking pan and a steamer.

How to:Place enough water in the steamer and start boiling.
Using a deep bowl mix egg yolks using a beater. Add condensed milk, evaporated milk and vanilla and blend well and continue mixing. Set aside.
On a stove top, caramelize sugar in the baking pan for few minutes in low heat. Remove the pan from heat and turn the pan around to spread the sugar syrup evenly. Allow the pan to cool.
Once the pan is cool enough, pour the plan mixture in the pan and start steaming over boiling water for 60 to 80 minutes.
Remove plan and allow it to cool before slicing.

While driving around looking for a new restaurant to eat I missed the street address so I made a U turn then I saw a sign, Mabuhay Bakery. I told myself that has to be a Filipino Bakery and I am right, a Filipino Bakery in La Palma, Anaheim, CA. How I wish I had my camera with me. Located at:

When I walked in the bakery I was kind of dissapointed that the shelves are not well stocked. The lady owner I think read my mind that she told me right away that I should come in the morning because they have more bake goodies. Really, it's okey because I could see that they do have a wide selection of freshly baked breads and sweets. That's what matter the most and the taste.
Here are some of what they have to offer:

They also have a good selection of kakanin from merengue, kutsinta, sapin-sapin and puto.
The lady owner nicely interrupted me and asked "Mind if I ask why you taking picture?" I turned my sweet smile and said "I hope it's okay with you, I do have a food blog and with luck you might pick up more business? She said "Oh no, go ahead. I would love that. Free promotion!" That just cracked me up....so Filipino.. Freebies!
While driving home I can't resist the smell and started munching on the hot pandesal I bought.Pianono, puto and mamon was my dinner today.
I love breads and sweets and for sure I did not regret spending $20.- worth of breads. This won't be my last trip to Mabuhay Bakery.

Oh yeah, according to the lady owner Mabuhay Bakery has been in that location for 7 years. Seven years? I have been living for 11 years less than 10 minutes away and first time I saw this place.

Pancit Canton Guisado

I was inspired with the noodles I had last week from my favorite Chinese restaurant. On how they serve it saucy and sauce, veggies and meat topping the noodles. I want it more Filipino so I used pancit canton instead of egg noodles. It turned out really good. I think the trick to it is the minced ginger and sesame oil. You could also add other vegetables desired. Give it try. Ingredients:
8 oz. Pancit Canton, Excellent Brand
1/4 lb sirloin steak, sliced thin (or pork)
1/4 lb boneless chicken thighs
1/2 lb shrimp
1 small red bell pepper, julienned
1/2 small cauliflower, cut into bite size
1 carrot, sliced
1/4 lb green beans, cut into half
1 small onion, sliced thin
1 thumb size ginger, minced fine
4 cloves of garlic, minced
1 can baby corn, drained
1 tbsp sesame oil
2 tbsp canola oil
2 tbsp light soy sauce
1 tbsp cornstarch, diluted in 2 tbsp water
salt and ground black pepper to taste
Cooking Direction:
Boil enough water in a deep pot. Once it starts boiling blanche the noodles for a minute and season a pinch of salt. Remove noodles, drain and garnish with sesame oil. Set aside.
Using a wok saute ginger, garlic and onion in canola oil till caramelized. Add beef and stir fry for 2 minutes. Add chicken and stir. Allow chicken to cook. Season the meat with soy sauce. Start adding the vegetables starting with the carrots, cauliflower, green beans, bell pepper and baby corn. Stir fry for few minutes. Add 3 cups of water and turn to boil. Once it starts boiling add the shrimps, stir and simmer for 5 minutes. Add diluted cornstarch, stir noodles and remove from heat.

Arrange cooked noodles in a serving dish. Pour meat and veggies mixture over the noodles. Garnish with slices of lemon or calamansi and serve while hot.

Enjoy your Pancit Canton Guisado with some pandesal...YUMMY!

Layers of Cream of Corn, Whole Kernel Corn, Evaporated Milk, Sugar with Magnolia Mais-Queso Ice Cream over Shaved Ice.... Stir and Enjoy!

Steamed Tilapia

A Very Light and Low in Calorie Dish.
Ingredients:
1 large Tilapia, a pound or so each
2 pieces thumb size ginger, julienned
5 garlic cloves, crushed
3 tbsp Maggi seasoning/soy sauce (lesser if you prefer)
3 pieces key lime
1 piece jalapeno pepper, sliced thin
ground black pepper to taste
1 tbsp sesame oil
1 tbsp thin sliced green onion (garnish)

Cooking Direction:
Using a steamer boil a lot of water.
Season the cavity with ground pepper and fill with garlic and ginger.
Mix soy sauce and key lime juice and rub half of the mixture all over the fish.
Arrange fish in an aluminum pan or any heat proof dish. Pour the remaining soy sauce and key lime juice all around the fish.
Sprinkle the remaining garlic, ginger and the sliced jalapeno. Sprinkle more black pepper.
Steam over boiling water for about 30 to 40 minutes. Brush the sesame oil over the fish. Garnish with green onion and remove from heat and serve.
Makes 3 to 4 serving. Serve with steam rice.

Halo-Halo Special

Presenting....Casa Baluartes Special Halo-Halo. If only I could share this tall glass of Halo-Halo to all of you. It was soooo good till the last drop.
To make the best Halo-Halo you will need the following ingredients:Sweet Monggo Beans, Pineapple Nata De Coco, Sweet White Beans, Ube Halaya, Whole Kernel Corn, Shredded Young Coconut, Mango Ice Cream, Evaporated Milk, Sugar and Crushed Ice.
All those ingredients available at your local Asian Grocery Store.
I was going to make some Leche Plan to make my Halo Halo extra special but I just can't wait anymore. For sure that will be my next Halo Halo post. Maybe some home made sweet banana on it too. Yummy!

Ice Cube Shaver

Woke up today and already feeling hot. The first thing that got into my mind is HALO-HALO Special!I went to the garage and searched for my old Ice Shaver I purchased a long time ago but no luck so I told hubby to get dress right away, Mama needs a new Ice Shaver.
Luckily I already know where to get an Ice Shaver so off to 99 Ranch Grocery Store. In the store there were 2 kind to choose from. One for $7.99 (old fashion kind) and the other one for $19.99 (electric). I have no time and no plan to sweat while shaving the ice so I got the electric one.
Check it out! I could even use ice cubes or crushed ice with my new gadget. Sweet!
Now time to make me some Halo-Halo Special then maybe Mais Con Yelo tomorrow. Any other recommendation?

Chicken Embutido

Embutido is a Filipino style meat loaf that is usually served during special occasion. Try this simple, healthy and easy to prepare recipe. Just mix, roll, bake or steam and serve.
Ingredients:
2 lbs ground chicken (or pork)
1 cup chopped ham (or vienna sausage)
1/2 cup raisins
1/2 cup grated parmesan or cheddar cheese
1/2 cup relish
1/2 cup grated carrots
1/2 cup diced red bell pepper
1 small onion, minced
6 garlic cloves, minced
6 pieces egg, beaten
salt and ground pepper to taste

How to:
Mix all above ingredients. Refrigerate mixture for an hour. Divide mixture into 4 portions. Place a portion at the center of each foil. Roll the aluminum foil tightly sealing both ends. Repeat with the remaining mixture.
Heat oven in 425f. Arrange the rolled Embutido in a baking pan and placee in the center of the oven for 60 minutes. Remove from oven and allow to cool before slicing.

For Steamed Embutido:
Place the Embutido in a steamer and steam for 90 minutes. You can check if the Embutido is already fully cooked by poking a toothpick in the center of the embutido. If the toothpick comes out clean and dry then the Embutido is ready.
Remove Embutido from the steamer. Allow it to cool before slicing into serving size.
Brown slices of Embutido in a frying pan with a little amount of cooking oil when serving for breakfast.

*Serve with your favorite dipping sauce like ketchup or sweet and sour sauce.*

Bread Pudding with Raisins and Walnuts

Sharing to you another recipe on how to make bread pudding I learned from my Mom who is by the way a good cook.
This recipe reminds me of the bread pudding my neighbor in Iloilo, Nang Tess makes and sells on a daily basis.

Ingredients:3 loaves white bread
1 can evaporated milk
1 can condensed milk
5 tablespoon vanilla
6 pieces eggs
1 cup walnuts
1/2 cup raisins
1 cup melted butter

Cooking Direction:Cut bread into cubes. Arrange bread in wide baking pan and bake in 275f to toast for 20 to 30 minutes. Remove from oven and set aside.
Beat eggs, butter and condensed milk using a big mixing bowl. Add condensed milk and vanilla and continue mixing. Taste for desired sweetness. If you want it more sweeter you could always add more sugar. Start adding the toasty bread and fold. Continue folding the bread mixture while slowly adding the raisins and walnuts.
Start oven to 375f. Transfer the bread mixture in a 13x9x2 inches baking dish. Bake bread for 60 to 90 minutes. Check by poking a toothpick in the center of the baking dish to see if the pudding is fully cooked. Once the toothpick comes out clean and clear then the pudding is done.
Remove the dish from the oven. Allow to cool before slicing and serve.

Chicken Hamonado

A recipe that is great for any occasion. Serve it sliced or whole. You could also prepare this using pork.

Ingredients:
3 large chicken breast, fillet
2 cups pineapple juice
4 pieces sliced pineapple, cut thin
1 small carrot, sliced thin
6 pieces sweet pickles, sliced thin
2 tablespoon brown sugar
salt and ground pepper to taste

Cooking Direction:
Mix pineapple juice, brown sugar, salt and ground pepper in a deep dish.
Add chicken fillet to the mixture for 30 minutes and refrigerate.
Remove chicken breast and set aside the remaining juice.
Spread chicken fillet on a flat surface and top with slices of pickles, carrots, pineapple and roll.
Arrange rolled chicken on a deep pan and cover with the remaining juice.
Simmer in medium heat for 20 minutes.
Remove chicken from the pan and arrange in a platter.
Simmer remaining juice till it thickens. Pour over the chicken and serve.
