Lechon Paksiw

Lechon sa Oven (Roast Pork)
For roast pork you need:
7 lbs. pork leg
sea salt
groundpepper
garlic powder
Set oven to 400f.
Sprinkle pork with good amount of salt, garlic powder and groundpepper.
Bake pork covered with aluminum foil for an hour.
(That will prevent pork skin from burning)
After an hour remove aluminum foil. Brush meat drippings on the skin.
Continue baking in 400f for another 2 to 3 hours.
How to make Paksiw Letchon:
Slice roast pork into bite size.
Cook meat in:
1 cup vinegar
6 pcs. garlic cloves (minced)
1 teaspoon whole peppercorn
6 pcs. bay leaves
1/2 cup brown sugar and salt to taste.
Simmer for 30 minutes. Add 1/2 cup Mang Thomas lechon sauce. Simmer for 5 more minutes. Remove from heat and serve over steam.
