Chicken and Pork Adobo

Adobo cooked dry
2 lbs pork belly, cubed
1 whole chicken, cut into pieces
3 cups vinegar
5 pieces bay leaves
whole garlic, minced
1 large onion, sliced thin
1 teaspoon whole pepper
1 tablespoon sugar
1 teaspoon salt
1 pack anato powder, diluted in a tablespoon of cooking oil

Cooking Direction:
Using a wok boil pork in a cup of water till half way cooked. Add chicken, garlic, onion, whole pepper, bay leaves and vinegar. Continue cooking over medium heat allowing chicken and pork to cook and the sauce to thicken. Add sugar, salt and anato powder. If desire add ground pepper. Simmer till the sauce is almost gone. Remove from heat when it starts to sizzle. Serve over steam rice.
